Valentine’s Day

So I decided for Valentine’s Day I would make some treats for my coworkers. I got a recipe for Red Velvet Cheesecake Brownies from Sweet Pea Kitchen. I had seen some other pins of people using a heart cookie cutter for brownies and cookies so I decided to try it out with this recipe.

Here are the ingredients:
1/2 cup butter
2-oz dark chocolate, coarsely chopped
1 cup sugar
2 large eggs
1 tsp vanilla extract
1 1/2 tsp red food coloring
2/3 cup all purpose flour
1/4 tsp salt
8-oz cream cheese, room temperature
1/3 cup sugar
1 large egg
1/2 tsp vanilla extract

You start by adding the 1/2 cup butter and 2-oz dark chocolate to a microwave-safe bowl and heating it until it melts slightly. The you mix together the 1 cup sugar, 2 large eggs, 1 tsp vanilla extract and 1 1/2 tsp red food coloring.

Next you mix in the 2/3 cup flour and 1/4 tsp salt and blend until smooth. After it’s smooth you pour it into an 8-inch baking pan lined with parchment paper (so it’s easier to remove after).

For the cheesecake mixture you blend together the 8-oz cream cheese, 1/3 cup sugar, 1 egg and 1/2 tsp vanilla extract. Blend it with a blender so it comes out smooth. After it’s mixed spread 8 dollops over the batter and swirl with a knife.

Now you bake it for 35-40 minutes at 350 degrees. When it’s done remove and let cool. After I used a heart shaped cookie cutter to make hearts.

And there you have it! Heart shaped brownies. One batch made 10 and a lot of leftover scraps (which I was happy to eat).

My sister also made some pretzel bites and red velvet cheesecake cookies. The pretzel bites were so simple to make. Square mini pretzels, Hersey hugs kisses and red and pink M&M’s. Place a kiss on each pretzel and bake at 200 for 5 minutes (to warm up) then place an M&M on each kiss and that’s it! So easy and delicious snacks.
